Pine honey has a mild character, which makes it pleasing to almost all consumers. It does not have a strong aroma and has a medium level of sweetness. Its color takes on shades of brown. It is thick, and because of its low content of sugars, and especially glucose, it is slow to crystallize (1-2+ years). Its crystallization is most likely due to its natural mixing with honeys from other plants that grow together with it in the pine forests
