Pine honey has a mild character, which makes it appealing to almost all consumers. It does not have a strong aroma and its sweetness is of medium intensity. Its color has shades of coffee brown. It is thick, and because of its low sugar content, and especially its low glucose content, it is slow to crystallize (1-2+ years). If it does crystallize, it is most likely because it has naturally mixed with honeys from other plants that grow together with the pines in pine forests.
