About whole-grain tahini
Whole-grain tahini is made from unhulled sesame: the whole seed, together with its hull. That is why it has a darker color and a stronger taste than tahini made from hulled sesame. In some jars the sesame oil rises to the surface; this is natural, and a good stir brings it back.
At Katalahou you will find it from small producers and cooperatives:
- Φλώρος, Pangaio: sesame roasted over a wood fire and ground in stone mills, with a coarse grind.
- Αχιλλαδέλης, Lemnos: made in the traditional way, in stone mills.
- Krios, Evros: made from sesame of a local variety grown in the village of Krios in northern Evros, without fertilizers or pesticides.
- Μυρωδάτο, Xanthi: made from local sesame, ground in a stone mill by the Κοινωνική Συνεταιριστική Επιχείρηση Μυρωδάτο, and also available organic; Μυρωδάτο also makes organic tahini from black sesame.
