Fresh peas are one of the most popular vegetables in Greece, and we find them in recipes for ladera (vegetable dishes cooked in olive oil). They go wonderfully with artichokes and broad beans. A first choice for fasting periods, they are a very good source of protein and carbohydrates, while at the same time having a low fat content. They are recommended for children's diet.
